Hanna Root Vegetable Mash
Mashed potatoes are one of those inventions that, no matter how many times you see them on a menu or in a cookbook, they evoke that home-cooked Americana comfort feeling. I’ve had so many different versions of mashed potatoes. Once when I met Tom Collicchio, he told me he used EVOO in his mashed potatoes. Some use butter. Once I met a chef who used cream cheese. Everyone has their favorite.
Ever since I discovered Hanna sweet potatoes, when I was on the Autoimmune Protocol, I have been in love with these dense, waxy, slightly sweet potatoes. I had never heard of them, and so many people to this day do not know what they are! So I’m happy to introduce you to my favorite potato. Meet Hanna, if you don’t already know, she’s delish! Mix them up with root vegetables of your choice and serve yourself a heaping helping of this new version of a traditional side dish.
