If you’re considering increasing your nutrition through food, reducing inflammation, or just a healthy, delish and nutrish recipe or two, you’ve come to the right place! Most of these recipes can be made in about 30 minutes, faster than it takes for delivery to show up, and less expensive!
“Don’t remember ingredients, remember techniques.” Is something a chef I worked for used to say. So be sure to carefully follow the Methods for each recipe. Anyone can read a list of ingredients. Assembling them properly is the key to great results!
If you want to substitute flavors, say you like basil better than oregano, or you’re out of thyme (pun intended), go for it!
Some of my favorite tools are a scale, portion scoops, and one or two sharp knives. Try these links for some of my favorite things.
I give you measurements for all of the recipes and occasionally drop in the weights for accuracy. (pounds or ounces).

ASIAN-INSPIRED SHRIMP NOODLES
Elevate that old pasta salad with this bright and bold noodle recipe, of course grain, gluten and dairy free.
SKORDALIA (GREEK GARLICKY POTATO DIP)
This dip is so delish, it’s served year-round. Perhaps you’ve had it in a Greek restaurant, usually one of a “trio” of dips on an appetizer menu, along with eggplant dip (melinzanosalata) and hummus.
Mushroom Onion Gravy
The simplest gluten/grain free, non-dairy and most delicious gravy I have made yet. Thanks to my friend Hope, whose brilliant husband, Marty, a chef, uses. This technique for gravy. If you grill, the flavor from the turkey drippings and addition of bone broth makes it rich and delicious.
BRUSSELS SPROUTS WITH CURRIED CARROT PUREE AND TOASTED PEPITAS
You never know where the next recipe inspiration will come from, and this time it was a local taco bar! These Brussels are roasted with fig spread and served with a curried carrot puree. There’s a little extra sugar, but it’s paleo enough! Still dairy, gluten/grain and soy free.
Core & Rind Smoky Cheesy Potatoes Au Gratin
A new adaptation of my au gratin potato recipe, using Core & Rind Rich and Smoky Cheesy Sauce. Perfect for steaks or barbecue foods, creamy, bold flavor and the potatoes have the perfect texture.
Savory Slow Roasted Carrots
The spices complement the sweetness of the carrots, and the cassava provides a crispy exterior. Slow roasting caramelizes and tenderizes the texture.
Tahini Chicken Salad
The dressing alone makes an excellent dipping sauce too. Perfect for zucchini fries or crudité. Double the dressing and keep it in the fridge for topping almost anything.
Mini Zucchini Fries
These mini zucchini have next to no seeds, and the flesh gets so soft and creamy when they’re air-fried in the coating. The cassava flour keeps them grain-free, light and crispy. They come together in a flash.
Cauliflower Tabouleh Grain-Free
Recreating this dish as a grain-free option was not too challenging because, as long as the ingredients are fresh, you can’t mess it up. To give the cauliflower rice a similar texture to the bulgur wheat, I “dry” it in a skillet.
Savory Spiced Braised Eggplant
Don’t skimp on the seasonings which add a smoky component to the creamy texture of the eggplant.
Au Gratin Potato Casserole
One of my favorite dishes when I worked in a local steak restaurant was the au gratin potatoes. I remember watching the chef thinly slice the potatoes, then layer them with caramelized onions and believe it or not, slices of pears. The pears gave the dish a wonderful sweet balance.
