Turmeric Cauliflower Rice Pilaf
My mom was a great cook. One of our favorite dishes was her rice pilaf. It was simple, but I think that’s what made it good. She would melt a lot of butter in a sauce pan, stir in the rice until it was warm, then add chicken broth to cook the rice. It was fluffy and buttery, fortified with the chicken broth. Everyone wanted to know how to make it like she did. And it was one of my kids’ favorite things.
These days I don’t eat grain, although once in a while I want to make that rice! I developed this version because I love turmeric on roasted cauliflower. I added the ghee and chicken bone broth as an homage to my mom’s original recipe. I think it works!
Serve it with the Lamb and Beef Kofta and Tzatziki sauce, or as a side to any dish. Even if you’re not a cauliflower rice fan, this is so flavorful it could change your mind.
Turmeric Cauliflower Pilaf
Ingredients
- 2 tablespoons ghee
- 1 medium size onion, diced
- 24 ounces cauliflower rice, either fresh or frozen
- 2 Tablespoons turmeric
- 1 cup chicken bone broth
Method
- Heat the ghee in a sauté pan large enough to accommodate the cauliflower rice. (It will cook down, but be sure to choose a pan that is large enough to allow you to stir frequently).
- Add the onion and sauté until translucent.
- Add the cauliflower rice and sauté until softened slightly (or allow to thaw if cooking from frozen.)
- Add the turmeric and stir to completely combine. Cauliflower will take on a golden color.
- Add the bone broth and stir, bring to a boil, then reduce heat and allow to simmer until all of the liquid has been absorbed, about 20 minutes. Be sure to stir occasionally.
- Serve with the Lamb and Beef Kofta, or anything you prefer.
