Savory Spiced Braised Eggplant

Despite my efforts to minimize eating nightshades, sometimes I love the peppery spices, tomatoes and vegetables that belong to that family. And when eggplant is done correctly, its creaminess and smokey flavor are irresistible. One day I saw some gorgeous Japanese eggplant and was inspired by their shape and beautiful color. I wanted to emulate the shape in the cuts, so I kept them long and thin. The braising method helps keep their shape and texture, and they’re done quickly. Don’t skimp on the seasonings, this combination brings out the best flavors and complements the vegetable perfectly. Finally, the creamy tzatziki sauce only adds to the unctuousness. Delish as a vegetarian entree, served over Turmeric Cauliflower Rice Pilaf, or as a side dish with your favorite protein. Leave me a comment if you try it. I’d love to hear your feedback.

Savory Spiced Braised Eggplant

Ingredients

  • 2 to 3 Small eggplants, halved and cut into long spears with skin on outer edges
  • 2 Tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/2 cup red onion, diced
  • 1/4 cup tomato paste
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon dried dill
  • 1 1/2 cup chicken or vegetable stock
  • Fresh chopped herbs such as cilantro and parsley

Method

  1. Sauté garlic until fragrant, about 30 seconds. Add the onion and sauté until translucent. Add the tomato paste, herbs and seasonings, stirring and smashing into the onion and garlic to create a smooth, roasted paste.
  2. Add the eggplant and stock and increase heat to high, bringing the liquid to a full boil. Then reduce heat to a simmer. Cover and allow to braise for about 10 minutes. While eggplant is braising, prepare the Tzatziki Sauce.
  3. Now increase heat to high again and allow liquid to reduce to a glaze, an additional 5 to 7 minutes.
  4. Remove from heat and allow to cool slightly, which will also help liquid to thicken.
  5. Serve with a drizzle of Tzatziki Sauce and sprinkle of fresh herbs.
