Date Energy Bites

Let’s face it, everyone has a version of this snack. It’s sweet and gives you a hit of protein. They’re packable and don’t need refrigerated. The recipe comes together quickly and it makes a lot. If you don’t think you’re a fan of dates, this will change your mind. I love how they are naturally sweet without being sugary. The nuts give them a nice balance and the vanilla perfumes them perfectly.

Ingredients

  • 1 cup unsweetened shredded coconut
  • ⅓ cup raw walnuts, chopped (you may substitute almonds, hazelnuts or any other nuts you prefer)
  • 1/2 cup large dried pitted dates, packed
  • 1 teaspoon vanilla
  • 1 scoop protein or collagen powder, optional

Method

  1. Preheat oven to 300ºF. Toast the shredded coconut and the walnuts until light golden and fragrant. This can burn quickly so keep an eye on it. (Or use your air fryer or toaster oven for this step).
  2. Remove from oven and spread on a sheet of parchment to stop cooking and allow to cool.
  3. Add the walnuts (or nuts of your choice) to the food processor, pulse to small chopped pieces. set aside in a separate bowl.
  4. Process the dates in the food processor (no need to clean in between) until you have a smooth mass. Add the coconut and the walnuts and process again until blended. It will appear crumbly but when a small handful is squeezed it will hold together.
  5. Use 1 ounce portion scoop or a teaspoon to portion out the balls (about 1/2 ounce each). Pick up each ball, lightly squeeze and hand roll to shape and make compact. Keep in an airtight container. May refrigerate for longer shelf life.
