Mini Zucchini Fries

Aren’t miniature vegetables just the cutest? It’s like those Savory Slow-Roasted Carrots. They’re so pretty in that small form, it makes me just want to cook them intact. That’s how I feel about these mini zucchini. They have next to no seeds, and the flesh gets so soft and creamy when they’re air-fried in the coating. The cassava flour keeps them grain-free, light and crispy. They come together in a flash.

Don’t fret if you can’t find the minis. This recipe works just as well if you cut a regular size zucchini into fry shapes. And if you don’t have an air fryer, that’s fine too. Increase the cooking temperature by 25ºF. It is best if you at least have a convection oven, to keep the air circulating.

  1. Prepare the pan or basket of the air fryer with a light coating of avocado or olive oil spray. If baking in the oven, preheat the oven to 425ºF and prepare a sheet pan with parchment paper and a light coating of avocado or olive oil spray.
  2. If using the mini zucchini, cut in half, leaving the tops intact.
  3. If using regular zucchini, cut into baton or fry shapes to the size desired. Pat dry with paper towels.
  4. Break the egg into a bowl large enough to accommodate a few pieces of zucchini at a time. Beat until well scrambled and add the water, mix well.
  5. Place the cassava flour on a plate and season with salt and pepper. Mix well to combine.
  6. Dip the fries in the egg wash, drain slightly, then place into the flour mixture, making certain all sides are coated. Shake off excess and place on the prepared air fryer pan or basket. If baking in the oven, place on a prepared sheet pan.
  7. Using the avocado or olive oil spray, lightly coat the surface of the fries until glistening.
  8. Use the vegetable setting on your air fryer (mine is 400ºF for 10 minutes) to cook until golden and crispy. Add more time if needed to achieve final result. If baking, place in preheated oven for 12 to 15 minutes, and, if necessary, add more time.
  9. Serve right away with an additional finish of coarse sea salt, if desired.
