Grilled Pickled Vegetables
I love grilled vegetables. And I love pickled vegetables. So, I thought, why not combine the two? The flavor of the grilled vegetables, their sweetness concentrated from the fire, then complemented by the pungent acidity of the brine. A perfect combination, I believe! I love to use multi-colored carrots. Once they’ve brined, I slice them on a bias to make angled looking dipping sticks for the Roasted Beet Hummus.
One note, if you choose to use beets, grill then peel, and brine them separately, otherwise all of the other vegetables will turn pink.
