Irish Soda Bread - Grain Free

This is delicious all year long, so don’t save it for only St. Patrick’s Day. And the leftover stale slices make excellent French toast too. It’s a simple recipe and completely grain free if you follow the instructions for grain free baking powder. (Most baking powders are made with corn starch, which, you may know, corn is a grain.)

Give it a try with ghee, or if you can tolerate, a little Irish butter. Kerrygold is actually an excellent brand and it’s simple enough to make your own clarified butter, so try that too!

Ingredients

  • 1 cup almond flour
  • 1/4 cup flaxseed meal
  • 1/4 cup coconut flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder -OR- 1/4 teaspoon baking soda combined with 1/2 teaspoon cream of tartar (use this in place of baking powder if you are corn-free )
  • 1/4 teaspoon salt (Celtic salt if you have it)
  • 1/4 cup raisins
  • 1/4 cup full fat coconut milk
  • 2 eggs
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon organic honey

Method

  1. Preheat oven to 350ºF.
  2. Combine all dry ingredients except for the coconut flour.
  3. Add the raisins to the coconut flour and toss to coat them. This helps to keep them from clumping together when you mix the dough. 
  4. Add the raisins and coconut flour to the dry mixture.
  5. Combine the eggs, coconut milk, apple cider vinegar and honey in a separate bowl. Beat the eggs slightly to combine all liquids. 
  6. Add the wet ingredients to the dry, mix just enough to moisten the dry ingredients. Allow to rest for 10 minutes, this gives the dry ingredients time to absorb the liquids.
  7. Turn dough out onto a baking sheet with parchment and shape into a round loaf.
  8. Using a knife, score through the top in a cross shape. 
  9. Bake for a total of 25 to 30 minutes, rotating the pan halfway through baking. 
  10. Allow to cool before slicing. Best if served the same day.
