Bacon Wrapped Stuffed Dates
Careful if you come to my house for a gathering. Anytime I can fool my friends into believing they’re eating something naughty, I feel like I’ve gotten away with something. This recipe is a perfect example. It’s filled with cheesy creamy goodness and wrapped in crispy bacon. But you’d never know the cheese is dairy free and the bacon is a healthy alternative.
I always cook with uncured, no sugar bacon. The better brands contain no nitrites or nitrates. It’s simply sliced pork belly. sometimes applewood or hickory smoked, but other than that, unprocessed. The creamy center is a cashew cheese that is seasoned with garlic and herbs, very similar in flavor and texture to Boursin, but completely dairy free. It’s so good in many applications, and you’ll see in this recipe that it bakes well too!
I use a pastry bag to fill the dates with the cheese. I find it easiest. Disposable pastry bags are easy to find at any local craft or cake supply store, they’re worth the investment but you could use a disposable plastic bag also. cut the tip of the pastry bag just large enough to fit into the hole made when the dates were pitted. Gently squeeze until the date is filled, wrap with the bacon and bake for 12-15 minutes. I like to skewer them with a 4 inch or 6 inch wooden skewer, which makes them easy to serve as individual appetizers.
