Loukaniko Sausage
When we go to Greece, we make sure we get our fill of this delicious sausage, native to the country. The flavors come from the local ingredients, and the combination of citrus, pork and lamb is unmistakable. Here at home, it’s not easy to find, but this recipe comes close to the original. It’s simple to put together. You can shape the patties into any size you like (or shape links without the casings) freeze and cook as needed.
