Loukaniko Sausage

I’ve taken the labor out of this recipe, which traditionally requires forcing the meat mixture into casings, then smoking it. Yes it’s worth it if you want to take the extra steps, but this adapted version comes together quickly and gives you all of the flavors.

When we go to Greece, we make sure we get our fill of this delicious sausage, native to the country. The flavors come from the local ingredients, and the combination of citrus, pork and lamb is unmistakable. Here at home, it’s not easy to find, but this recipe comes close to the original. It’s simple to put together. You can shape the patties into any size you like (or shape links without the casings) freeze and cook as needed. Making your own sausage is simple, it’s much fresher, and you know there are no sneaky sugars or weird additives lurking. Let me know if you try it!
