Perfect Every Time Paleo Mayonnaise

 
 

I became a mayonnaise fan as an adult. As a child, my mother was not a fan of condiments, so she rarely served them to us, maybe ketchup. Neither were her siblings condiment fans. When I posted the tutorial video on social media, my cousins were laughingly commenting on how I happily demonstrated how to make “mayonasa” (Greek for mayonnaise) despite our parents all hating it! It hadn’t occurred to me until they said it. Actually they didn’t like whipped cream, cream cheese or pretty much anything with a creamy consistency. I remember, one Thanksgiving, serving pumpkin cheesecake to my Uncle Steve, and telling him it was “deep dish pumpkin pie”. He devoured it, and my Aunt Helen kept shushing everyone from revealing the secret ingredient.

This Whole30 and paleo compatible mayonnaise makes the perfect condiment or base for almost any sauce or dressing. You can add pesto, chipotle or other flavoring components. Making mayonnaise from scratch is quick and the ingredients are simple. As I always say, mastering the technique is the key to success in cooking. I’ve added the video to this post so you can watch the demo. I love knowing that I selected the ingredients myself, rather than purchasing a commercial product. I prefer to use pastured eggs and avocado oil. Use what you can afford. If you would like to substitute the avocado oil, a light olive oil also works beautifully. Extra virgin olive oil is too heavy and will cause the emulsion to break. I hope you try it and have success.
