Yield: 6Living Delish & Nutrish: Tina WellsPrintWith ImageWithout ImageSimply MeatloafPrep time: 15 MinCook time: 50 MinTotal time: 1 H & 5 MIngredients1 lb ground beef1 lb ground pork1/2 cup almond flour1/2 medium onion, minced2 Tablespoons Paleo Powder AIP seasoning1 egg1/4 cup The New Primal ketchup2 Tablespoons The New Primal Dijon mustardSalt and pepper to tasteMethodPreheat oven to 350ºF.In a large mixing bowl, combine the beef, pork, almond flour, Paleo Powder seasoning and the egg. Mix together with your hands to gently combine all ingredients. Do not over mix or the meat will have a tough texture.Shape into a loaf and place into a glass loaf pan, or onto a rack over a sheet pan. This allows any fat to render out, but it may give the meatloaf a drier consistency. Bake 40 minutes, rotating the pan in the oven halfway through cooking.While meatloaf is baking, mix ketchup and mustard together. Once meatloaf has finished baking, spoon the mixture over the top of meatloaf and spread evenly. Bake additional 5-10 min until setAllow to rest for 5 minutes before slicing.I like to serve with a mix of Hanna sweet potato and parsnip oven fries. I simply peel and slice into fry shape, toss with olive oil and roast on a sheetpan while meatloaf is baking. Give them a toss when you rotate the meatloaf.
