Tuna Nicoise Potato Toasts

This no-recipe recipe has all of your favorite Salad Nicoise ingredients stacked up on a sweet potato toast.

Nicoise Sweet Potato Toasts

Ingredients

• Sweet potato or Hanna Sweet Potatoes, sliced to yield 5 or 6 slices
• Olive oil for brushing slices
• 2 5 ounce cans Olive oil packed tuna
• Steamed Egg (1 per serving)
• 1/2 cup Black or Kalamata Olives
• 2 to 3 cherry or grape tomatoes per serving, quartered
• Fresh herbs such as basil, thyme and dill
• Sea Salt
• 1/2 teaspoon Capers per serving
• Olive oil and balsamic to drizzle over

Method

1. If baking, preheat oven to 350ºF.
2. Slice white or Hanna sweet potatoes into 1/4 inch slices, lengthwise, and brush with olive oil on both sides.
3. Bake or air fry until crisp-tender, about 10 to 15 minutes each side.
4. Place the potato slices onto a serving platter. Top with tuna and stack up the other ingredients.
5. Drizzle with olive oil and balsamic and finish with fresh chopped herbs, season with salt and pepper.
