Anyday Paleo Muffin
When I was baking professionally, we had a recipe we called “Blank Muffin”, which was a basic batter to which you could add any flavor or inclusion. It was a staple in the kitchen for chocolate chunk, orange, lemon poppyseed or cinnamon walnut. This paleo version gives you the same results with no grain. Use the non-dairy yogurt you prefer to keep it dairy free if you like.
It’s great for anytime because it’s the perfect base for seasonal recipes too (an orange cranberry for thanksgiving, mmm!)
