Quick Pickled Red Onions
These onions contain no sugar or sweetener, so they’re the perfect condiment for Whole30. Top breakfast frittatas, add them to salads, bowls of “stuff-over-stuff”, lettuce wraps. They’re just so good you’ll wonder how you ever lived without them. Use a good, organic red onion and the natural sweetness will come out.

Quick Pickled Red Onions
Ingredients
- 1 large red onion, sliced thin
- 1 Tablespoon bacon fat (substitute avocado or coconut oil if you want vegan version)
- 3 to 4 Tablespoons apple cider vinegar
Method
- Heat the bacon fat or oil in a sauté pan large enough to accommodate the onion slices.
- Add the onions and sweat on medium-low heat until slightly softened but not caramelized.
- Add the apple cider vinegar and enough water to cover onions.
- Bring to a boil, then immediately remove pan from heat.
- Allow onions to steep in the liquid until cooled.
- If you want to quicken the process, pour contents into a heatproof container and chill in refrigerator.
- Drain liquid and store in a container with a tight fitting lid.
