Sweet Potato “Toast”

Make a bunch and re-heat in the toaster for a quick breakfast or lunch. Top with anything!

This is a simple no-recipe recipe.  I prefer to use Hanna sweet potatoes or garnet sweet potatoes (dark red/purple on the outside, white on the inside) as they hold their shape better once cooked.

These are great to have on hand for quick breakfast or lunches. Top with shredded chicken, pork, avocados, roasted veggies, salsa, whatever sounds good or you have in your fridge!

Slice sweet potatoes about 1/4" thick and lightly coat with olive or avocado oil. Bake in the oven on 375º for 30 minutes, flipping slices halfway through cooking. Or, in the air fryer on 375º for 10-12 minutes. Store extras in the refrigerator and re-heat in toaster or oven.
