Cold-Press Picnic Sandwich

Perfectly packable, or serve at your next gathering as an entree or appetizer. Also great for tailgating or a sports gathering.

Simply bake the Focaccia Dough recipe in a 9 inch round cake pan, fitted with a piece of round parchment in the bottom of the pan and coated or sprayed with vegetable oil or ghee.

Once cooled, slice the loaf in half width wise.. Generously coat each bread half with Balsamic vinegar and olive oil, (use 3 parts olive toil to 1 part acid; vinegar of your choice, lemon juice or combination) or your favorite healthy dressing. This helps to keep the bread moist and “adhere” all of the filling together when pressed.

Fill with your favorite sandwich fixins, I like nitrate and nitrite-free Italian style meats, and vegan or cashew cheese, arugula and mixed lettuces. You can use your favorite tuna salad recipe, make it a po’ boy style, whatever you like! Once filled, wrap it tight with plastic wrap and drop the whole thing back into the cake pan. Place a plate or something flat that fits inside the pan, then add some weight to the top (a couple of cans work) and let it “press” overnight in the refrigerator.

It travels well, so keep it wrapped and slice it when you reach your party destination. Large slices are great for an entree-type portion, smaller slices work perfectly mixed in with other snacks.
