Cool & Spicy Mango Salsa
Since we typically have a glut of fresh mangoes from our backyard tree around mid-May each year, I’m always looking for new recipes. But THIS is an oldie but goodie. Tried and true! I’ve altered it a bit over the years. If you don’t have mangoes, you can use peaches or pineapple!

Cool & Spicy Mango Salsa

Ingredients
- 3 large ripe mangoes, or 4 - 5 champagne mangoes
- 1/2 cup diced onion
- 1 clove minced garlic
- 1 large red or orange pepper, or 2 - 3 small peppers, diced
- Juice of 1 lime
- 1 Tablespoon cumin
- Fresh cilantro, chopped
- Salt and pepper to taste
Method
- Dice mangoes to about 1/2” to 3/4” cubes.
- Add the other diced vegetables
- Add the lime juice, cilantro and season with salt and pepper as desired.
- Chill before serving to allow flavors to meld.
