Cool & Spicy Mango Salsa

Since we typically have a glut of fresh mangoes from our backyard tree around mid-May each year, I’m always looking for new recipes. But THIS is an oldie but goodie. Tried and true! I’ve altered it a bit over the years. If you don’t have mangoes, you can use peaches or pineapple!

Cool & Spicy Mango Salsa

Ingredients

  • 3 large ripe mangoes, or 4 - 5 champagne mangoes
  • 1/2 cup diced onion
  • 1 clove minced garlic
  • 1 large red or orange pepper, or 2 - 3 small peppers, diced
  • Juice of 1 lime
  • 1 Tablespoon cumin
  • Fresh cilantro, chopped
  • Salt and pepper to taste

Method

  1. Dice mangoes to about 1/2” to 3/4” cubes.
  2. Add the other diced vegetables
  3. Add the lime juice, cilantro and season with salt and pepper as desired.
  4. Chill before serving to allow flavors to meld.
