Lazy Day Leftover Queso DIP

This is one of those No-Recipe recipes. I love to just pull leftovers together and see what happens. My family calls it Ready Set Cook. It’s a lazy weekend afternoon and I’m caught in the middle of one of those TV series that I can’t stop bingeing. And I’m hungry. What sort of quick, no-frills yet nutritious lunch can I pull together from whatever is in the fridge? I find leftover rotisserie chicken, a jar of non-dairy cashew queso, (like a primal Kitchens brand) an open jar of salsa, some guacamole, and a little avocado oil mayo. 

I combine them all in a microwaveable bowl or serving dish by shredding the chicken, mixing in the jar of queso, a heaping soup spoon full of mayo, a splash of salsa, stir it together so it’s thick and creamy, then microwave until bubbly. Top it with some cool dollops of guacamole, perhaps some pickled onions, jalapeños, whatever you like. Serve with grain free tortilla chips chips. This would also work with the Instant Pot Chicken recipe, leftover Carnitas, canned chicken from Trader Joe’s (theirs is clean with no yucky ingredients) or Trader Joe’s Birria Beef, found in the frozen section. Make a big batch and serve it at your next casual gathering or tailgate. It’s a winner.
