Southwest Cauliflower Rice
This is my take on Nom Nom Paleo’s recipe. I made a few changes based on the ingredients I had in the pantry the first time I made it and they stuck. The Nom Nom Paleo recipe link is below, if you want to compare. She’s one of my favorites and provided creative solutions for me when I was adapting to my paleo lifestyle.

Southwest Cauliflower Rice
Ingredients
- 3 slices cooked uncured, no-sugar bacon, chopped fine or crumbled (cook and set aside)
- 2 tablespoons coconut or avocado oil
- 1 small onion, chopped fine
- 2 cloves garlic minced
- 16 oz bag of organic frozen cauliflower rice
- 2 teaspoons Paleo Powder seasoning (or mix up some dried oregano and basil)
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 of small can tomato paste
- 1 small can of green chiles, drained
- Fresh cilantro, chopped
- Fresh lime for squeezing over finished cauliflower rice
Method
- Heat the oil in a large skillet over medium heat. Saute the onions until soft, then add the garlic.
- Add frozen cauliflower and break up any frozen clumps. (Sometimes I use a meat hammer to pound the bag before opening.)
- Allow to heat through, stirring occasionally until thawed and water is reduced. (This minimizes “mushiness”)
- Add tomato paste, green chiles and spices. Stir to thoroughly combine, reduce heat and cover to simmer for an additional 5 to 7 minutes. When serving, top with crumbled bacon, a squeeze of fresh lime juice and fresh chopped cilantro.
