Spicy Tomato Jam

Many years ago when my kids were young, we would camp in Cape Cod every summer. There was a shop that made and sold their own jams. We would always stop there to pick up a few jars to add to our camping food supply. Our favorite by far was a spicy pepper jam. We would pick up fresh fish from the local market and cook it on the campfire, slathered with the pepper jam. To this day it’s one of my husband’s favorite food memories.

Recently I was thinking about that jam and, although didn’t have any fresh peppers, I did have cans of organic Rotel tomatoes and chilies in my pantry. So, I riffed on the original concept and came up with this. It’s delicious served with the crab cakes recipe and I’m happy to tell you, with a few ingredients, you can make your own homemade jam with ease. The addition of grass fed gelatin is great for gut health too.
