Warm Broccoli Salad

Sauté fresh broccoli and add a few ingredients from your pantry.

Using items you have already prepped , you can easily pull together a simple side dish that is elevated from a basic steamed vegetable. Takes very little time if you have the pickled onions and some cooked bacon. So, make those ahead, and keep them on hand!

Warm Broccoli Salad

Ingredients

  • 3 slices uncured no sugar bacon (if you have prepped bacon, just use a Tablespoon of reserved bacon fat or your preferred fat to sauté)
  • 1 bunch broccoli, trimmed into bite-size pieces
  • 2 Tablespoons apple cider vinegar (I usually just use the cap to measure)
  • 1/4 cup avocado oil mayonnaise
  • Pickled onions(optional but delicious addition, recipe link here)

Method

  1. Cook the bacon until crisp in a sauté pan large enough to hold broccoli. 
  2. Remove bacon from pan and reserve the rendered fat. Add the broccoli.
  3. Sauté on medium-high heat until crisp-tender. Add one or two Tablespoons of water to help to “steam” the broccoli to make the stems more tender, cover with a lid for a few minutes. 
  4. Remove from heat and place into a bowl. Add vinegar and mayonnaise and toss to coat.
  5. Add pickled onions (as desired)
  6. Chop bacon and top with bacon bits.
  7. Delicious cold too, so make extra!
