Coconut Date Rum Balls
My mom used to make bourbon balls during the holidays. They contained powdered sugar and ground up vanilla wafers, cocoa, bourbon, of course, I don’t remember what else. So I wondered if I could concoct a version of the holiday classic using my Date Energy Bites recipe. Happily this recipe worked the first try. They’re chocolatey and boozy qnd sweet from the dates. I mixed up a little powdered monk fruit and shredded coconut to coat the exterior, and the coconut is a nice complement to the rum. You can change up the nuts and liquor if you like, create yuor own combination. (I think grand marnier would be excellent, too, I may try that next!)
