Haystacks

I recently saw something similar to this on social media and it made me remember my mom’s Haystacks, so I had to recreate!

These are so good! I feel like if that’s all I write about this recipe, it should be compelling enough for you to try it. Believe it or not, sweetened condensed coconut milk only has about 3 grams of added sugar per can! And if you use unsweetened cacao chips (the condensed milk is really sweet enough) you end up with a gooey, crunchy cookie. Or granola snack if “cookie” is too much of a stretch for you.

One bit of caution, these want to s p r e a d when they’re baking. I highly recommend baking them on silicone mats, and if they come out of the oven looking flat and unappealing, you can simply use a spatula to gather up the edges and mound them up. They will hold their shape as they cool. I also recommend chilling in the refrigerator until completely cooled. Once they’re cool, though, you can keep them at room temperature in an airtight container, and they’re much easier to eat. Don’t forget to tag me if you try them, or comment below!

Pro Tip

Do not add more condensed milk than needed. Even a little too much could make these cookies spread out quite a bit. If that happens, baking them on a silicone mat will allow you to use a spatula to push them back together while still warm.
