Quick Shaved Pickles
I must admit that pickles were not on my radar until recently. So much so, in fact, I would ask for the pickles to be left off anything I ordered in a restaurant. Maybe it’s commercial brands, but I never liked that bitter chemical aftertaste, or the sugariness of sweet pickles. Until recently, when I started to incorporate more fermented foods into my diet on a regular basis, did I rediscover a couple of recipes that I had in my repertoire but didn’t make often. This recipe is over 20 years old, I learned to make this at my first restaurant job. We served it with prosciutto wrapped shrimp and garlic aioli. Start with the pickles and build a delicious plate however you like from there. One day I’ll post the shrimp recipe too!
